Happy What I Ate Wednesday!

Let’s start off with a question…

Do you guys like these kind of posts?

I love seeing a complete picture of what people ate all day, but that’s just me.  Everyone is not me (thank God).  The world isn’t ready for that much crazy.

Breakfast –

Coconut 30 minute oats:
1/3 cup rolled oats
1/3 cup Greek yogurt
1/3 cup light coconut milk
1/2 banana
toppings: unsweetened coconut, PB, and Crofter’s Europe Superfruit spread

And coffee! (as if you couldn’t guess)

Lunch –

Leftover veggie pizza from Hawthorne’s, dressed up with some fresh basil and a side of marinara for dunking

I hearby declare Hawthorne’s as having the best veggie pizza out of all the locally owned pizza spots.  It’s really good and they’re generous with the veggies which I love.  Plus you can customize your pizza – a huge plus for me!

Lunch dessert –

Watermelon

I feel the need to clarify that this watermelon is on a salad plate, even though we all know I could totally polish off a piece of watermelon with the same size ratio to a dinner plate..or a serving platter. 😉

Dinner-

The *most* delicious wrap!

Whole wheat tortilla filled with one egg, spicy lentil hummus, feta cheese, and a variety of lettuces, cukes and maters on the side

Yum!

I got snacky last night and also had a small snack bag of Tropical Foods sunburst trail mix I snagged at Saturday’s race.

And then I made this…

Dinner Dessert –

1/2 frozen banana
1/2 cup frozen cherries
1/2 cup light coconut milk
2 Tbsp. unsweetened cocoa powder
bit of Stevia
chocolate “shell” – 1 1/2 tsp. coconut butter, 1/2 tsp. cocoa powder, too much Stevia 🙁

This was supposed to be soft-serve consistency but I went a little overboard on the coconut milk, which made it too runny.  It was still runny, but the chocolate shell was much much too sweet.  I added too much Stevia before tasting it.

This dessert definitely deserves another shot. I think it was good in theory and at least I know where I went wrong.

  1. I like seeing what people are eating, especially if they have the same fitness goals that I do. I was thinking that watermelon slice looked huge, but delicious! I’m pretty sure I could polish off one that is the size I *thought* it was!

  2. I like seeing what other people choose to eat during the day. I always have! When I was younger (and not really health-conscious at all!), I would come home and talk with my sister about what we ate that day- I loved it!

  3. I feel like a lot of my throw togethers end up a little mediocre. I get so frustrated when that happens though! I always end up tweeking and tweeking until it’s at least a little more edible though, disappointing food is no fun. Especially disappointing smoothies! If they’re too runny I’ll always add more ice, fruit etc etc until it’s thicker. I like eating them up with a spoon. The magic shell on there is a good idea too, even if it didn’t work for you this round. I might have to try that on my next choco loaded smoothie batch…. which is nearly every morning haha.
    And I DO like seeing what other people eat throughout their day… I’m always curious about that. I find it so interesting to see how a person eats for an entire day! Hence the food blog obsession right? Haha

    • The challenging part for me is remembering to go back and try the recipe with tweaks. Often I give up on them. The shell might have even been tasty without the stevia. The smoothie was plenty sweet enough so it might be nice to have a contrast.

  4. I made some chocolate chip banana muffins with my kids last week and I may have gone overboard trying to “healthy” them up. Whole wheat flour, applesauce, yogurt, and sugar in the raw was subsituted for other ingredients and the texture was just off. They still tasted ok for family consumption but I would not have shared them with friends.
    I enjoy “What I Eat Wednesday” to get ideas for new recipes or meal ideas of my own. Thanks for sharing!

    • Oh Stephanie, I’ve definitely been there many times. I’ll give it to my husband hoping he likes it more than I do but usually confirms I’ve over-healthified it. My solution is usually to cover it in PB. Problem solved! 😉

  5. I made a tofu scramble last night for dinner… it was my first time cooking with tofu and it turned out fantastic!

  7. I like your What I Ate Wed!! I really like that you save it until the end of the day as one post. I prefer those summaries versus posting 3 times a day for each meal, etc.

    Question: do you ever find yourself consciously eating better on a Wed since you know you’ll be blogging all of your eats???

    • Thanks Julie! And to answer your question yes and no. A lot of things make my eating healthier like my CSA share waiting be used in some way. Most of the time I eat what I want mixed with trying to have done sort of healthy balance. I actually appreciate it when people show a realistic view of their eating habits so I try to do the same – good or bad.
