I love making a big batch of pancakes to enjoy on a weekend that can be enjoyed all throughout the week. I made these sweet potato and coconut pancakes yesterday and should have enough for a few days if I savor them one at a time like I did this morning.
Monday mornings need pancakes, people. It will make your day so much happier. 🙂
But let’s rewind a bit. I got up super early, as promised, to get in my workout. I really thought I was going to defer it to this evening. Rascal was a mess last night! He got up to wander around the bed or to see what I was doing at least 10 times. Finally, I said to Brad, “He’s got to go.” Brad tucked him into his own little bed and he didn’t bother us again. I felt sure that the many interruptions and the fact that I was so completely exhausted when I went to bed was going to keep me from working out.
BUT, when my alarm clock went off, I was fully awake and ready to go in a few minutes.
I would have liked to do 5-6 miles on the treadmill, but I had a meeting at 8 am and couldn’t afford to be late. Instead, I got in 4.58 miles on the hill setting of the treadmill, Level 3. I feel like it’s a more realistic run if I put it on the hill setting.
After getting ready, I enjoyed this plate of deliciousness before heading out the door.
A sweet potato coconut pancake with about a teaspoon of Cashew butter and 1/2 Tbsp. of sweet potato butter, an egg (made egg perfection style), plus two clementines. I put one of the clementines back when I looked at the clock and realized I needed to get to work.
Lucky me, Brad woke up just to sit at the table with me and talk. He has a flight this morning but doesn’t have to leave until mid morning. He really values his sleep and needs a lot more than I do so I really appreciate it when he joins me for breakfast.
Happy Monday morning! Our office is wrapping gifts for a family we “adopted” for Christmas this morning. That definitely makes it seem like Christmas is here! 🙂
