Uncle Sam cereal

I kind of MIA yesterday.  I left my computer cord at home and was out and about all evening so blogging didn’t happen until later that night.  Let’s rewind to breakfast.

I keep hearing about Uncle Sam Cereal and how it’s the healthiest cereal out right now and you know I love to try new things, so I picked up a box at TJ’s last weekend to give it a try. I have two containers of yogurt in my fridge right now, so I knew I needed to break into them before the expiration date passes by.

Bowl of yogurt yumminess: 2/3 cup 2% Greek yogurt, sliced and nuked strawberries (makes non-sweet strawberries so much better!), 1/2 sliced banana, 1/2 cup Uncle Sam, ~1 Tbsp. AB, and ~1 Tbsp. organic strawberry jam.

Besides having 7 grams of protein and 10 grams of fiber, what I really loved about Uncle Sam’s cereal is that it isn’t sweet but it’s hearty.  I don’t make my homemade granola very sweet because I like to add it a mish mash of different things.  I feel limited to what I can add when toppings are super sweet since I like to add fruit jam to everything without being overloaded with sugar.  Uncle Sams is a perfect everything-topper for me.

So good and filling.

One thing does perplex me about Uncle Sam cereal.  I think it’s awesome that it has flax seed in the cereal, but we can’t digest whole flax seeds.  So technically, they just pass through our digestive system without the nutrients being absorbed unless you grind the flax seeds.  Uncle Sam, can you grind the flax seeds so we can get their benefits?

Despite my super-filling breakfast, I was hungry by 10:30 and pulled out a piece of Heidi’s soda bread I had packed with me, just in case.  I blame it on not getting enough sleep the night before.  When I’m exhausted, I need food to keep me going or I will most definitely crash and burn.  I love how the pepitas make this bread have little specks of green throughout.  I like this bread okay (it is bread afterall!), but I don’t think I’ll be making it again.  I have so many better recipes.  But it was nice to try something new.

Lunch was with coworkers to celebrate an upcoming wedding so there are no photos to share.  I had a really delicious Ahi tuna wrap with a wasabi sauce.  I wasn’t really hungry enough to eat all of it and honestly should have saved half of it for later that afternoon.  I always have good ideas after the fact. :\

We’ll just call it carbo-loading for my long run today.  More on that later…
