Sardine salad is back. I kid you not. I love those little fishies.
Sardine Salad:
-Sardines packed in olive oil and lemon juice
-chopped red bell pepper
-chopped carrot
-chopped celery
-heaping Tbsp. of canola mayo and dijon mustard
-salt + pepper
I took half of this and put it on a bed of spinach. Two nights ago I baked two sweet potatoes wrapped in aluminum foil until the sweet smell filled my house. I grabbed one of those as well with a tiny mountain apple. I’m never nuking a sweet potato again. They’re just too delicious baked. No butter need apply.
I had a meeting that took most of the afternoon off site and it when it ended a little early, I headed home. I thought about working out but really didn’t want to be rushed to workout and shower quickly.
Plus, I’d rather have a snack. By 6 pm I was starving!

Is it possible that I got a little overzealous with the apple butter?
To quote George Washington, “I cannot tell a lie, I chopped down the cherry tree I had a second muffin,” but this time only with apple butter. It’s hard to go six hours without eating then just have a small snack.
I’ll stick to a small dinner to balance everything out. I’m really excited for dinner because I’m going to one of my favorite Charlotte restaurants, The Fig Tree . On top of that, I’m meeting another Charlotte blogger, Brittany of Mommy Words. 🙂 The Fig Tree has never made it to the blog before so I’ll definitely be singing it’s praises tomorrow.
