I didn’t quite get 8 hours of sleep last night, but it was close. I woke up feeling so much better than yesterday morning, but I’m still feeling the yoga in my arms. Serves me right for not keeping up my strength training. I was using weights almost everyday up until my wedding, but now all I want to do is run. I need more balance.
After an indulgent Saturday night, Brad didn’t eat but about 1/3-1/2 of his pumpkin oats last Sunday morning. He knows how I feel about waste so he put his leftovers in the fridge. I thought this morning was a perfect morning to break them out and have an easy peasy breakfast.
To make the leftover oats more filling, I added:
1/4 cup 2% Greek yogurt
couple of sprinkles of pumpkin granola
~1 Tbsp. pumpkin butter
~1 Tbsp. TJ’s sunflower seed butter
Pumpkin Granola
-3 cups rolled oats
-1/2 cup organic canned pumpkin
-1/4 cup unsweetened applesauce
-1/4 cup TJ’s dried berry blend (blueberries, cranberries, golden raisins, and cherries)
-1/8 cup maple syrup
-1/8 cup honey
-1 tsp. cinnamon
-1 tsp. pumpkin pie spice
-3 tsp. ground flax seed
Mix everything together and spread out on baking sheet. Cook at 400 degrees for 25 minutes, stirring twice during the cooking process.

Isn’t it nice to eat a mish mash of different things for breakfast? I like a little of a lot of things and always have. I would much rather have this than a big bowl of just cereal and milk. In my opinion, it’s just soooo much better.
Beggar alert! Rascal is starting to realize if he sits patiently in his bed or underneath my chair, I am more likely to let him lick my bowl. Brad and I don’t tolerate begging, not that this keeps Rascal from trying every once in a while.
Gotta power through work today! I’ve got a fun evening planned! 🙂
