Sleepless morning

Last night I got to do something I never get to do.  I got to relax, all by myself, on a Saturday night.  A few years ago, I would have hated staying at home on a weekend night.  I must be getting old, because now I love it.

Brad went over to our friend Gibson’s place for a bourbon tasting, and I kicked back and did nothing productive (except blog) the entire night.

My body was screaming for carbs, probably due to mucho running, so I did the smart thing and polished off the pizza.  But this time I added pesto and oh it was good.  Chianti was a nice accompaniment.  Beer goes with Papa John’s; wine goes with homemade summer veggie pizza.

The hunger monster was still alive and kicking so I ate the least photographic thing possible: crumbs from the bag of tortilla chips which probably amounted to 1 1/2 -2 servings, because crumbs do count, even if you can’t actually count them.  😉

A sweet finish of caramel apple pie fudge.  I tried to hide this from myself by putting it in the back of the pantry, but it’s not really hiding if you hid it yourself.  Most five year olds know this through experience with hide and go seek, but somehow I struggle with this concept.

Even though I went to bed at midnight, I woke up at 5 AM!!! Grrrr.

Once I established that no more sleep was going to happen this morning, I got busy on my to-do list.

I finished writing and addressing a lot of wedding gift thank you notes.  Signed, sealed, but not delivered.  I need more stamps.

In case you’re wondering, we bought the D seal and the red wax while we were in Italy.  I LOVE all things stationary related and I have wanted a wax seal since I saw it in the 90’s version of Robin Hood with Kevin Costner.  You should know that this was the most perfect seal I made that morning.  Now I have to write I’m sorry I messed up the seal on your thank you note cards.

Then, around 7 am, I started shelling the crowder peas (or field peas) I bought at the farmer’s market.  My grandmother would be so proud.

Crowder peas are really more like a bean.  Like most beans they have abut 110 calories in 1/2 cup (one serving) and also have quite a bit of protein…7 grams in a serving to be exact.

After those two tasks, I was ready for breakfast.  I was debating between smoothie and pancakes, but decided I’ve been neglecting oats for way too long.

Quite possibly the best bowl of pumpkin oats I’ve ever made.

Pumpkin Oatmeal (for two)

-1 cup rolled oats
-1 cup almond milk
-1 cup water
-1 ripe banana
-2/3 cup canned pumpkin
-1/4 tsp. cinnamon
-1/4 tsp. pumpkin pie spice
-Stevia to taste
-sprinkle of salt

The star of the show: pumpkin butter from the Altapass.

Toppings: 1 Tbsp of pumpkin butter and almond butter.

Crossing my fingers I don’t crash and burn from too little sleep.  I’ve got grocery shopping plans, baking plans, and I’ve also been talked into going to yoga today.  If anyone wants to come and watch me make a fool out of myself this afternoon, it’s only $5 at Y2 Yoga.  And….you get to do yoga as well.
