Breakfast and lunch in a pinch

Quick and easy breakfasts are hard to come by in my house this week.  I may just have to break down and go to the grocery store. 

 

This morning, I hurriedly threw together an overly ripe banana (perfect for the freezer!) with some PB and sweet potato butter on an Ezekiel wrap. 

Then there was coffee.  🙂 

I sometimes start drinking my coffee while I’m putting my make up on in the bathroom before breakfast.  However, I would never take a cup of anything in a public restroom.  I often set my thermos on the floor outside the restroom when I’m making a trip to fill up my water bottle and visit the ladies’ room at work.  But yet, I have no qualms with drinking coffee in my bathroom at home.  Is that strange?

I made my lunch just before bed last night, which explains the dark lighting.  With the cupboard practically bare, I’m getting extremely creative to find a good lunch.  This was so easy, simple, and delicious!

Besides an orange I also made a rice bowl. 

I ate most of my rice bowl by spooning it onto roasted seaweed snacks from TJ’s.  Some people hate the taste of seaweed (like Brad), but I personally love it!  It’s wonderfully salty. 🙂

I made my rice bowl using:

1/2 cup brown rice
1/2 cup frozen shelled edamame
1/3 cup egg white
handful of spinach (~1 loosley packed cup)
big splash of soy sauce (~2-3 Tbsp.)
small splash of toasted seasame oil (~1/2-1 tsp.)

I cooked my brown rice in 1 cup of water in my Pampered Chef microwaveable bowl for 10 minutes total, stirring at the half way point.  I also microwaved the edamame for about 1 minute.  Then I microwaved the egg white in a ramekin.  Last, I threw everything together along with the sesame oil and the soy sauce, and tossed it together.  When I microwaved it for a minute at work, the spinach wilted. 

So delcious and easy in a pinch!

My schedule is full of meetings today, which have actually been very interesting.  Interesting meetings are definitely hard to come by. 

I have busy but fun evening planned.  Looks like Rascal is going to be home alone again tonight, poor thing.
