The quickest and the tastiest

For lunch today, I made the quickest and tastiest lunch ever!

Just look at all those beautiful colors and textures.

In five whole minutes I microwaved a sweet potato that I had baked last week for one minute.  Then threw on some goat brie and nuked it for 30 more seconds.  Finally, I topped it with some almonds and a drizzle of honey.

I thew some swiss chard on my plate for the last 30 seconds of microwaving while some fig balsamic vinegar heated in a small pot.  It took about 2 minutes for the balsamic vinegar to turn into a sweeeeet balsamic reduction.  I threw some of that on my slightly wilted chard and called it lunch.

The best lunch I’ve had in a while.  And it only took FIVE minutes!

…quite possibly the healthiest microwave meal ever. It sure beat a Lean Cuisine. 😉

I busted my tail to get home today for lunch.  I’m training on our HR software all day so my walk was 15 minutes of power walking versus my usual 10.  I definitely got my heart rate up and now I’m heading back to work for the rest of the day.

On the post-work agenda: 
– biking to the new house
– watering the yard
– running (!)
– dinner
– laundry
