Curried butternut soup

I can’t believe how incredibly dark it is at 5:15 pm!  I know this shouldn’t surprise me.  This happens every year.  I just get used to driving home in the daylight, it surprises me to come out of work 15 minutes later than usual and for the sun to have almost disappeared.

On my way home, I dropped my aunt’s house to pick up Rascal who stayed at her house for the day.  He has such a great time playing with her Jack Russell.  It’s nice that I have somewhere to take him so he can socialize.

We discussed plans for Wednesday.  I have two pies to make for Thanksgiving: pecan pie and sweet potato pie.  I’m going to take a half day on Wednesday and then make then pies with my little cousin, Ashlyn, at their house.  She’s a budding cook and I can’t wait to have her help me in the kitchen.

Now, onto dinner.  I went a little squash crazy last week and have a butternut squash that hasn’t been used yet.  I decided to use it to make a curried butternut squash soup.

Curried Butternut Squash Soup

1 two pound butternut squash
4 cups low sodium vegetable broth
1 red pepper, chopped
2 carrots, chopped
1/2 large onion, chopped (~1 cup)
2 Tbsp. yellow curry
2 tsp. red curry
1/2 tsp. parsley
1/2 tsp. all spice
salt (~2 1/2 tsp) and pepper to taste
1 Tbsp. olive oil

I cut the butternut squash into fourths then nuked them for seven minutes.  Meanwhile I chopped all the veggies and added them to a large pot with a bit of olive oil.  I sauteed the veggies until they were soft, then I added the broth.  I scooped out all of the butternut squash and disposed them, then scooped out the flesh and added it to the pot.  Next, I pureed the soup with my immersion blender.  You could also use a blender or food processor.  Last, I added all of the spices and stirred.

This soup has a lot of curry so a big dollop or Greek yogurt is perfectly cooling with the spice.

I added a Wassa cracker on the side because nothing is better with soup than a big crunchy cracker for dipping.

Rascal and I are on our own tonight.  After a day on the go, I’m so ready to relax and catch up on TV and blog reading.
