Dinner and a movie

Last night, I wanted to make Brad’s mustard barbecue sauce for grilled chicken breasts.  But I couldn’t find the recipe anywhere!  So, I decided to wing it and throw in a side of roasted veggies.

I sliced and chopped the following and placed on a baking sheet sprayed with olive oil from a Misto:

– 1 medium sized sweet potato
– 2 small red potatoes
– 2 medium sized carrots
– 1 large parsnip
– 1 large shallot
– 1 long sprig of fresh rosemary

I also sprayed some more olive oil over the vegetables before placing them in the oven at 400 degrees F for 25 minutes.

I adapted the sauce from this recipe.

Mustard Barbecue Sauce (makes enough for 2 lbs. of chicken)

1/2 cup of prepared yellow mustard (I used French’s)
1/4 cup apple cider vinegar
2 Tbsp. honey 
1/2 tsp. of paprika
1/2 tsp. of Worstershire sauce 
1/2 tsp. white pepper
1/2 tsp. of cayenne pepper
1/4 tsp. of black pepper
1/4 tsp. salt

Before brushing the sauce on the chicken, put in a separate smaller dish.  (You will want to add more after grilling, but you don’t want to use what you brushed onto the raw chicken.)  Marinate the chicken in some of the sauce for about 30 minutes before grilling.  Cook chicken on a grill or grill pan until thoroughly cooked through (no pink!)

I only cooked one pound of chicken, so I only used about half of the sauce for this meal.  I gave Brad a whole breast, then halved another chicken breast so I could have one now and save one for later.

Pay no attention to the pile of clothes in the background I had threw on the floor to force myself to fold after dinner.

After a really nice dinner, Brad and I watched The Girl with the Dragon Tattoo, which we rented on iTunes.  The movie was really interesting and had a very well developed plot.  It was extremely graphic and parts of it were disturbing.  I suggested the book to Brad when we were in Italy on our honeymoon and he couldn’t put it down.  I’m sure we’ll be watching the second movie in the trilogy soon, The Girl who Played with Fire. If you like thrillers and can tolerate the graphic scenes, it is definitely worth seeing.

We through in a bag of popcorn and staying at home was as good as a date night. 🙂
