How ironic is it that after my last post, my next post is all about oatmeal?
I slipped this in because its a NEW oatmeal recipe, and one that I love, so you know I had to share it. 😉
Coconut Pomegranate Oatmeal (serves two)
1 cup rolled oats
1 cup light coconut milk
1 cup waterÂ
1 ripe sliced banana
1/4 cup finely shredded coconut
1/2 cup pomegranate aerials
1/2 tsp. cinnamon
1 cap of pure vanilla extract (~1/4 tsp.)
pinch of salt
Heat coconut milk, water and oats over high heat until mixture comes to a boil. Â Lower heat and add banana, mixing well. Â Add salt, cinnamon, and vanilla. Â Once liquid is absorbed (~10 minutes), pour into two bowls and top with coconut and pomegranate aerials.
I, of course, also added a Tbsp. of almond butter, because oats just need AB.  🙂
Note: I used light coconut milk because it’s all TJ’s has been carrying lately. Â If you use full fat, use 1/2 cup coconut milk and 1 1/2 cup of water or keep the same ratios for extra coconut richness). Â You can purchase pomegranate aerials at some stores (like Trader Joes). Â I cut a whole pomegranate in half then pulled at the aerials with my fingers.
Sweet pomegranate is just as good as my best friend jam, that I like to put on everything.
I had some Chai green tea with a spot of almond milk on the side. Â I skipped the coffee this morning because I thought I could probably use the extra hydration.
Brad and I had plans for an eight mile run this morning; his longest run yet in his half marathon training!
We finished in 1:15:14. Â Pretty good! Â I’m so proud of him for tackling eight miles. Â His pace was great and he felt good the whole time. Â I felt a little crampy throughout and a runny nose did not help matters. Â It’s so weird how you can feel differently week to week.
I’m tapering a bit for for the OBX half marathon I’m running next week. Â Then I have a very scary 20 miles to tackle the following weekend. Â I’m starting to hit a mental hurdle with running outside in the cold. Â This is the time of the year I usually start gearing down from running outside and take my workout inside. Â But one thing I am not is a quitter, so I’m going to find a way to get through these week night training runs in the dark, no matter what it takes.
Brad is so supportive and is well on his way to doing great at the Disney World Half. Â I’m actually really glad we’re running two different races (he’s running the half and I’m running the full) so we’ll be there to cheer each other on on our big day.
