I have loved reading your responses about my conversation with my dad discussing the different cattle farms he saw on his trip out west. Even though some of you haven’t made this choice yet for yourself or choose to be vegetarians and have no need to choose, it’s great to hear supportive comments just the same.
After making pesto for dinner last night, I was a little excited with what was waiting on me at lunch.
Roasted broccoli with Garlic Gold and some Kosher salt, my last two pieces of spelt bread with Lauging Cow mozarella, sundried tomato, basil flavor, tomato sauce, and PESTO! Another version of pizza improv.
Yuuummmm. This was unbelievably good.
I’m craving pizza lately, but this should tied me over until tomorrow night. Saturday is a long run day and I think I’m going to make pizza my night-before meal, after last Friday night’s meal left me feeling a little blah during my run from lack of carbs.
My sweet finish looks like red plums, but the are not plums.
They’re pluots, a hybrid of a plum and an apricot…quite possibly the prettiest fruit I’ve ever eaten.
My were these things juicy! A napkin wouldn’t suffice, I had to hold each over a plastic container to let the juice drip down.
I’m such a messy eater sometimes…so glad I shut the door when I eat lunch or who knows what my coworkers would think of me with pluot juice running down my wrists. 😉
