Nut Butter$

Pumpkin  is not sweet.  This is something I have to remind myself every fall, when I start eating my weight in pumpkin weekly.

Not only is pumpkin not sweet, it’s bitter.  While banana is usually enough sweetness in my overnight oats (they were actually 1-hour oats this morning), with the additional pumpkin added in, more sweetness was needed.

-1/3 cup oats
-1/3 cup almond milk
-1/3 cup TJ’s 2% Greek yogurt
-1/4 cup organic canned pumpkin
-Stevia
-1/2 banana
-1/2 individually sized packet of Justin’s Maple AB
-~2 Tbsp. pepita trail mix

After a few bites, I went back to the fridge, grabbed the maple syrup and added 2 teaspoons.

Much better.

Maybe it’s the cooler mornings (although the afternoons are still in the 90’s..grrrr) but I think I was in the mood for hot oats and this just didn’t do it for me this morning.

But I really loved the Justin’s Maple AB, just as I’m loving maple anything right now.  If only it wasn’t so darn expensive!  I’ve been careful with my money this month since we’re about to move, have two mortgages for who knows how long, and I’m dreaming of a white Christmas kitchen. 🙂  I don’t think a $10 jar of nut butter is part of my spending plan.

But it’s just sooo good…
