What I ate Wednesday 6/29


Look at me remembering to participate in What I Ate Wednesday two weeks in a row!

Breakfast –

Plain fat free yogurt, with puffed kamut, and the last (~2 Tbsp) of kamut flakes for extra chew, topped with almond butter and strawberries; coffee and a splash of milk on the side

Lunch –

Couscous, toasted tempeh, and marinara sauce, topped with a bit of grated pecorino cheese; carrots and cukes, more yogurt with blueberries and some coconut

Random, I know.  This is what happens when you barely have enough time to fix and eat lunch.  I have to be honest and say that I only ate three of the carrots.  These little guys showed up in my CSA box this past week and they kind of taste more like parsnips than carrots.  I’m going to try roasting them next week to see if I like them better this way.

Snack –

Udi’s gluten free bread (just trying it out), sunflower seed butter, and Crofter’s jam.

Please note: my hand is freakishly small so this piece of bread was obviously meant as a prop in a doll house.

Dinner –

Moroccan lentil soup (check back later for the recipe) and a huge ear of corn, I cut in half so it would fit in a small pot, with some Earth Balance.

Dessert –

Dried mango x 2 and a cup o’ tea (unpictured)
