Operation veg-ful lunch day 4 & 5

I love the expression, “eat the rainbow” and I definitely applied this principle today at lunch.

I made a concoction that was half salad, half egg hash by combining 1 egg + 1 egg white with about an ounce of goat Crotin cheese (from the Goat Lady Dairy) and a huge handful of arugula.  I cooked the egg in a skillet, then when it was almost done, I added the arugula and cheese.

Red bell pepper and and carrots with hummus, plus a piece of toast with apricot jam, rounded out my meal.  Needing something sweet, I snacked on two plums before heading back to work.

If you’re wondering about day 4 of Operation Veg-ful Lunch, it was another bowl (the last actually) of this delicious stew.  If you’ve seen one bowl, you’ve seen them all.  But tasting it is an entirely different story. 😉
