Breakfast quinoa

Old habits die hard.

I woke up at 5:08 am and could not go back to sleep this morning.  My body is so used to getting up at an ungodly hour and refuses to let me sleep in a little…like say, to 5:30 am.  😉

A few extra minutes for me meant a few extra minutes on the elliptical this morning.  I felt good, so I pounded out 45 minutes on Level 10 Hills.  I think the Hills setting was more difficult than the Random setting I usually use.

I returned to find Rascal perched on the bed waiting for him to let him down.  Usually he snuggles under the covers up until it is time for me to take him outside, so he must have caught my early morning bug.

I wanted something different for breakfast this morning so I used up the last of the red quinoa I cooked last week to make a delicious and new-to-me breakfast quinoa.

I nuked my quinoa for 1 minute after adding some almond milk, cinnamon, and allspice; heavy on the cinnamon.

Then I topped the whole thing with:
-fresh blackberries
-raisins
-walnuts
-drizzle of maple syrup

Yum!  This totally satisfied my “I need a new breakfast” hunger.  It was delicious, different, and filling.

Quinoa is such a healthy grain! It’s a complete protein and loaded with vitamins and minerals.  Plus, you can do all kinds of things with it (check out my recipe page for ideas) including use it in a savory breakfast.  Eggs and salsa, perhaps? 🙂

And…I’m off!  I’m riding my bike to work today which probably isn’t the best idea since the weather is calling for rain.  But my bike is essential to getting to yoga on time this evening, and I can’t be late!
