Picnic lunch

Lunch today, looked like I ate it on a pic-a-nic blanket.  But, sadly I did not.  I just snapped a photo of it on a dish towel, when I prepared it last night, so I didn’t have to haul my camera to work with me today.

Today’s salad wasn’t quite as good as yesterday’s salad.  It had mixed greens, red bell peppers, carrots, tomatoes, and lentil and pea sprouts, drizzled with balsamic vinegar and honey.  I think it had a little too much fresh ground pepper and also I think I prefer lemon juice over balsamic vinegar wtih a salad.

My half sandwich was delicious with jam, toasted tempeh, goat Brie, and alfalfa sprouts.  Sweet, savory, creamy, and nutty, all wrapped up into one little sandwich. 🙂

I had blueberries for dessert.  They were pretty tasty, but could never live up to the blueberries we pick in Currituck, NC every summer.

I left my afternoon snack at home to conserve space in my book bag.  Hopefully my last chewy oatmeal bar and two kiwis will hold me over through hot yoga tonight.

My plan is to eat lunch at work, bike home in early afternoon, let Rascal out, bike back to work, then bike quickly back home after work to change and go to yoga.  I’m hoping taking Rascal out midday will keep him from needing to “go” until I return from yoga this evening.  I have a 5:45 pm class that I cannot skip.

Y2 Yoga has a volunteer program and I volunteered to help clean up after this class, which means I get to take the class for free!  How awesome is that? I don’t typically take their $15 classes, but since they offer only two $5 classes on weekdays, this class time fit my schedule best.

I’m busy busy today.  Just the way I like it! 🙂
