Noodles and a bake sale

I’ve been a little MIA doing pre-employment stuff for my new job aaaallll day.

Let’s rewind to last night.

I don’t remember where I picked up this bag of Organic Planet Soba noodles, but I knew I wanted to incorporate it in dinner.

I like how a serving of noodles has a “Just say NO to GMO’s band, although one serving is a bit large if you ask me.

I used to the soba noodles to make a dish inspired by this delightful dish Jennifer served me last week.  I made some tweeks just because I’m completely hopeless at following a recipe.

I sauteed a block of cubed tempeh, shredded carrot, and baby bok choy in a skillet, while I boiled the soba noodles.

I also mixed together Brad’s peanut sauce, except I didn’t have any fish sauce on hand and I added two extra teaspoons of soy sauce to thin out the sauce a bit.

My version didn’t turn out half as pretty as Jennifer’s because after doing the cooking portion of this dish, I went to pick up Brad from the new house, and returned to find that everything had kind of congealed in my absence.

I did the best I could.

I put a heaping pile of spinach in a bowl, dumped the tempeh, veggies, and noodles on top, and poured the peanut butter sauce over the whole concoction using a fork and spoon to toss everything together.

It was delicious and I ended up going back for about 1/3 more of the bowl you see here and Brad polished off the rest.  I think he might be warming up to tempeh a bit after this dish, even though he’s never been a big fan before.
