I couldn’t wait for lunch today. But what else is new?
I used to need a mid-morning snack if I worked out in the morning. Maybe I’ve bulked up my breakfasts or my body has just adapted, because I am good to go until about noon, most days.
My lunch was so pretty today. My breakfast might have been all about the blue, but my lunch was a rainbow.
In my daily salad (well, almost daily): spinach, half a chopped apple, red bell pepper, sprouted peas, chopped celery and carrots, pumpkin seeds, a drizzle of lemon juice and honey.
I should never buy bottled salad dressing. A small drizzle of honey and lemon are the best things for a salad. Nothing is worse than an overpowering dressing, but lemon and honey tend to compliment all of the flavors of a salad, letting all those delicious flavor shine through. I used to only eat salad because I felt like I was supposed to, but eating them almost everyday has made me actually love them.
They definitely have grown on me in a big way.
The best part of lunch featured Wally’s (my father in law’s) famous pimento cheese.
I grew up not liking pimento cheese at all. I don’t hate mayo, but the heaps of mayo most people put in pimento cheese is just gross. Then I met Brad and visited his parents and had the best pimento cheese I’ve ever had. Brad requested that his dad bring us some of his pimento cheese and lucky for us, he did.
Wally told me how to make it once, but I really don’t remember now. I know it involves freshly grated cheddar cheese, possibly another type of cheese (?), just a bit of mayonnaise, and pimentos of course.
Pimento cheese is a classic southern dish and one I now love. I smeared a thin layer (~2 Tbsp.) on two pieces of toasted Ezekiel bread with some cherry tomato halves and a leaf of Romaine lettuce.
It’s a southern twist on grilled cheese! 🙂
Brad is thinking of starting a blog called “Does Pimento Cheese Taste Good on This?” Obviously, he’s already thinking of content.
