Thank you so much for your honest perspective on calorie counting. I’ve said a lot about how calorie counting is a detrimental thing for me personally, but I don’t think that’s the case for everyone. I bet perfectionist types like me have the most difficult time, but if you’re typically easier on yourself and more forgiving (how I want to be), you probably can handle the numbers game without stressing yourself out.
For me, learning the calorie content of foods was ultimately helpful. With a clear knowledge of calories, I can decide if something is “worth it” or not. Most of the time, heavy rich pasta dishes or pecan pie is not worth it. Chocolate, cheese, and wine = so worth it.
Speaking of chocolate…today is one of those days that call for a special breakfast. I have a job interview today. I was raised to believe that important days call for very good food.
And what is more special than chocolate?
Okay, champagne. But mimosas before a job interview is just not acceptable.
If you’re adding chocolate to your oats (as I am) the trick is to cut it very fine into slivers with a good sharp knife. It will melt more easily that way.
But these weren’t just any ol’ chocolate oats I made, these were chocolate and PB oats. You could even call these Reeses cup oats.
Reeses Cup Oats
1/2 cup rolled oats
1/2 cup almond milk
1/2 cup water
1/4 cup egg whites (optional)
2 Tbsp. peanut flour
1 Tbsp. unsweetened cocoa powder
pinch of salt
Toppings:
1 Tbsp. peanut butter
1/2 oz. dark chocolate, chopped finely
Greek/plain yogurt (optional)
Bring oats, milk, and water to boil and reduce heat. Add egg whites and stir quickly. Add PB flour and cocoa powder and stir well. When most or all of the liquid has been absorbed, pour contents into a bowl and add toppings. Enjoy!
For some reason i decided to get the plain European yogurt at TJ’s, rather than the Greek. I haven’t had plain yogurt is so long and I’ve grown completely unaccustom to the texture of regular yogurt. It’s so thin! The taste is still good, but the richness is completely absent.
As soon as I put it on my oats it completely melted. 🙁
Coffee was more than necessary this morning, it was vital. Even though I’m working from home this morning because I have a job interview in Charlotte, I woke up before 5 am and could never go back to sleep. My brain started working and there’s just no getting it to stop once I’m fully awake. I had this cup + 1/2 of another.
I’m crossing my fingers, thinking good thoughts, and saying a prayer that my interview goes well.
