Whole foods salad bar style

My lunch was amazing today and all because of my salad.

It was good in that “there is so much in here because I made it Whole Foods salad bar style” way.  When I hit up the salad bar at Whole Foods or Earth Fare, I often put things on my salad that don’t typically go on a salad.

My non-salad food topping today was leftover sweet potato from last night.  Other toppings on my bed of spinach:

– sliced carrot
– chopped yellow bell pepper
leftover tofu
– a few almonds
– slivers of grass-fed cheddar
– Newman’s sweet onion dressing (~1 Tbsp.)

So good.

On the side I had some Greek yogurt which I ate by scooping it up with dried mango.  I love dried mango, but I think the constant chewing through it’s leathery texture gave me a headache.  Isn’t that weird?

This photo Brad emailed me earlier today made my day.  If there is a blanket in site, Rascal will find a way to get under it. 🙂
