During our oats: love ’em or hate ’em discussion (see comments), I was reminded of the goodness of overnight 30-minute oats, so you know I had to make them for breakfast this morning.
The power of suggestion is…well, powerful.
And, since I have two almost-used-up nut butter jars, I had to take two of my favorite breakfasts and make them into one…
30 minute oats in a jar
I’m convinced that there’s no way to take a pretty picture of oats in a jar. A 99% used jar of PB is just not photogenic, no matter how pretty your place mat is.
My concoction:
1/3 cup rolled oats
1/3 cup Greek yogurt
1/3 cup almond milk
I mixed this together, then poured it in my almost empty PB jar.
After 30 or so minutes, I added:
~2 Tbsp. unsulfered shredded coconut
1 tsp. Tropical Traditions coconut cream concentrate (nuke for 15 sec. first)
~1/2 Tbsp. Justin’s maple almond butter
My jar of PB had only about 1/2 of a Tbsp. of PB left and I know I need more protein and fat than that to get me through the morning. Good thing I found a more than half used single size serving of Justin’s maple AB. That stuff is lick-your-knife good! But oh so pricey!
My coffee tasted extra good this morning. I think it’s because I didn’t really measure it very well when I added my grounds to the French press and probably added a little more than usual.
Before breakfast, I did what I thought would be an easy 3 miles on the treadmill. I only put the speed at 6.0 (10 minute mile) and the incline at 1%, but man was this hard! I guess the combination of still being in marathon recovery mode and the fact that I just did cardio less than 11 hours ago made my “easy” run super difficult. But it feels good to be exercising again. 🙂
Oats Q+A round two: How many of you like cold overnight oats? I admit, it’s an acquired taste and it took me some time to get used to, but now I love it! But I really only like it if I use a 1:1:1 oats, almond milk, Greek yogurt ratio.
