“Burgers”

Best snack of the week: a TJ’s whole wheat sandwich then with Barney Butter and chocolate chips…

because you can only see Tina eat this so many times without trying it yourself.

This was intended to be a pre-run fuel, but as I saw the sun starting to go down, my desire to run became less and less.  My desire to run has an inverse relationship to the amount of sun light there is outside.

I promised myself I would run as soon as the sun came up in the morning and decided to start on dinner instead.

Grilled Portobella and Red Pepper “Burgers” (serves two)

2 large portobella mushrooms
1/2 red bell pepper sliced 1 in. thick
2 Tbsp. hummus (store-bought or homemade)
1/3 avocado, sliced 
2 hamburger buns (I used Alvarado Street Sprouted Wheat Hamburger Buns)

Marinade
2 Tbsp. balsamic vinegar (I used fig balsamic)
1 Tbsp. extra virgin olive oil
1/2 tsp. Garlic Gold or minced garlic
1/4 tsp. dried oregano
1/4 tsp. dried thyme

Combine marinade and brush onto mushrooms.  Allow shrooms to marinate for 10-15 minutes.  Put grill or grill pan on medium high heat.  Place shrooms and red pepper on grill or grill pan and cook until grill marks are charred onto the veggies.  Flip and do the same on the other side of the veggies.

On the buns spread 1 Tbsp. of hummus each.  Top each with a mushroom, avocado, and red pepper.  I like to “smoosh” the bun down so the avocado gets pressed firmly into the other ingredients and are less likely to fall off while you’re eating.

So yummy but a little messy with the juicy mushroom.

Brad said he liked it “okay” for a portabello “burger”.  He’s missing meat in his diet so I think what he really wanted was a real burger.  I thought it was delicious.  The marinade was really flavorful.  The roasted okra on the side (with EVOO, red pepper flakes, and salt) was a little mushy.  I think okra has already reached it’s seasonal peak, so I should stop buying it until next year.  It’s just not worth it if it’s not as good as okra at its peak.

Just kidding.  He gets to lick our plates if he’s good and doesn’t beg during dinner.  This is patty-cake.

Playing dead – I point at him with my fingers (like a gun) and say “bang bang!”, then he spins around a few times and fall over on his back like so.

Now, he’s just being impatient.  I gave in of course.
