I had to restrain myself from calling this post, Oops I did it again, for fear of losing my five readers. 😉
Not that I don’t still listen to Brittney Spears in the privacy of my own home and vehicle, but flaunting that would be a faux pas.
So what did I do again?
I made incredibly delicious baked oatmeal. But, this time it wasn’t pumpkin.   I made baked PEAR oatmeal. Brad said it was pretty amazing and he never lies about food. Trust me.
Baked pear oatmeal for two:
-1 cup rolled oats
-1 large pear, sliced into bite-size chunks
-1/2 cup almond milk
– 6 servings of TJ’s Stevia (~2/3 tsp.)
-1/2 tsp. cinnamon
-1/2 tsp. nutmeg
-1/4 tsp. salt
-1/4 tsp. baking powder
Toppings:
-12 walnut halves
-Greek yogurt
-maple syrup
-extra sprinkle of cinnamon
Microwave sliced pear for 2 minutes, then add them to the rest of the ingredients, plus their juice. Mix well. Spray two ramekins with non-stick spray or a little butter or oil. Add equal amounts of the batter and bake for 20 minutes at 350 degrees F. Top with walnuts, dollop of Greek yogurt, and a bit (~1/2 tsp.) of maple syrup. Top the yogurt with an extra sprinkle of cinnamon.
It’s like a warm pear crisp meets an oatmeal cookie. Who wouldn’t want that for breakfast?
