Someone made me lunch

As much as I love breakfast, it came way too early.  I had to get up a little earlier than usual to make sure I was at work and ready to help conduct interviews for an open position at 8 am on the dot.

For breakfast I had my typical strawberry chocolate green monster.  I should be more creative with smoothies but we only have chocolate whey right now and I believe only red berries go with chocolate.

On the side was a slice of spelt bread with blueberry jam.

I made lunch super quick this morning, but wish I had just forgotten because on my way to work I got a phone call from my super sweet Aunt Tonya.  She had made a big pot of vegetable beef soup and wanted to know if I wanted some for my lunch.  I had planned to drop Rascal off at her house any way, which is on my way to work, for a play day with her Jack Russell.  I was perfectly okay with forgoing my lunch for homemade soup!

The photo doesn’t do this soup justice.  It’s the same recipe my grandmother uses.  Basically you add leftover roast beef and any vegetable you have in the freezer to beef broth.  It’s perfectly delicious and reminds me of Thursday evening dinners at my grandmother’s house growing up.  It was one of her dinner rotations.  I kept my green salad with avocado, lemon juice and honey drizzle.  My local apple was super sweet and crisp.  My fish taco went into the fridge for tomorrow.

After a quick lunch and I was back to work.

Is it Friday yet?  I can’t wait for the weekend!
