I had a meeting this morning where breakfast was brought in. I never know what is going to be at these things so I always eat at home. Who am I kidding? With an hour drive, I would never make it if I waited to have breakfast at work.
I avoided the food until the end of the meeting when I decided to grab a small plate of strawberries and the miniest mini muffin in the world to take back to my office.
Lunch wasn’t quite as epic as I was hoping…
…but it was still good. I packed this yesterday, then left it in the fridge when I remembered my coworkers were taking me out to lunch.
Roasted broccoli and coconut millet with 1/2 mashed sweet potato
I thought the sweet potato and coconut would be really wonderful, but it was just okay. I had to add a bit of salt to enhance the taste and that did make it a bit better. I much prefer my tempeh and mango salsa over coconut millet much more.
This dish get’s brownie points for actually matching its container.
I also at this apple, not because I was hungry, but because I’m running on empty right now since I woke up so much earlier than usual this morning. I tend to eat to stay awake during these times.
I also tried this the PB Flavor and Fiber Bar. I thought this was one of the best bars i tried, but having had all of them now I have to say that banana bread is my favorite. This had a subtle PB flavor and was soft and chewy as all the bars are.
I left work around 4 pm to go print my reception place cards for table assignments. This was my last day at work before the wedding. I’m working from home tomorrow and then I’m home free until August 24th. 🙂
