New look new recipe

Surprise!

This is what Brad and I (okay, mostly Brad) has been working on for the past month…a whole new look to the blog.  I’m very blessed to be marrying a computer genius that is so very supportive.  This was actually all his idea.  He surprised me one day with a mock up of what he thought I might want my blog to look like.  It looked amazing and I only changed some very small things.  He was incredibly dedicated to getting this thing up and running and worked really hard on it yesterday when some of our wires got crossed and the blog had a few issues.  I’m so appreciative!  I hope you guys like the new look.

Now for the new recipe…

Edamame Burgers!  I sought inspiration from here and here.

Combine in a bowl:

2 cups of edamame

2/3 cup nutritional yeast

2/3 cup shredded carrots

1/8 cup ground flaxseed

1 Tbsp. Sriracha

2 Tbsp. Bragg’s Liquid Aminos

1/2 tsp. onion powder

1/2 tsp. ginger

1/2 tsp. salt

fresh ground pepper

Pulse in food processor until all ingredients are roughly chopped.  Spray cast iron skillet with non-stick spray (I used olive oil in the Misto). I used a 1/4 measuring cup to scoop out a heaping cup-full, then placed directly in cast iron pan, using the bottom of the measuring cup to flatten out each patty.

Fry until brown on one side, flip and brown the other side.

Meanwhile, I boiled 1 cup of brown jasmine rice in two cups of veggie broth.  When the rice was almost done, I sauteed about 2 cups of spinach in a pan until wilted.  I added the spinach to the rice along with 1 Tbsp. Bragg’s Liquid Aminos, 1 tsp. sesame oil, and 2 Tbsp. rice vinegar.

This was sooo good.  If you’re tired of black bean burgers, you must try this.  You can make it more or less spicy by adjusting the amount of Sriracha sauce you use.

Pear crisp in a small ramekin for dessert, topped with 2% Greek yogurt.  Scrumptious and not too sweet…just the way I like it. 🙂

I woke up way too early to mention to do some “No More Trouble Zones”.  Half way through the warm up I realized that my arms felt like jello.  Apparently the heavier than usual weights I used yesterday really tired my arms out.  I went back to bed and instead of sleeping thought about everything I need to do in the upcoming week.

Breakfast was a small piece of pear bread with about 1/2 Tbsp. each of sunflower seed butter and blueberry jam + a fried egg that got really crispy around the edges + strawberries.  Of course, there was coffee.

I got hungry for a snack around 10:30 and ate my “afternoon snack”.

Banana Bread Lara Bar…my first time trying it.  I really liked it.  I don’t think I’ve ever met a banana bread bar that I didn’t like.

Lunch went un-photographed today because my coworkers took me out to lunch to celebrate my wedding.  They gave me a very generous gift card and lunch at Jason’s Deli, my pick!

I had a big salad of mostly veggies, beans, and hummus (no dressing).  I also had a little bit of frozen yogurt/ice cream…I’m not sure what it was…soft serve vanilla and chocolate yumminess.

Today was super busy and full of meetings.  I’m so exhausted, I’m thinking about turning in waaaay early.
