I slept until a blissful 7:30 this morning and it was amazing.
I decided to whip up some overnight oats, since Brad was curious to try them. If you’ve been reading long enough, you know that none of my overnight oats actually happen over night. I’m just going to start calling them 30 minute oats from here on out.
My tried and true recipe: 1/3 cup rolled oats + 1/3 cup Greek yogurt + 1/3 cup almond milk + 30 minutes or so in the fridge = cold creamy oats.
I doubled this for two people, then separated them so we could add our own toppings.
In my half, I mixed in 1/2 a sliced banana and topped it with:
1 tsp. Tropical Traditions coconut cream
1 Tbsp. TJ’s sunflower seed butter
1 1/2 Tbsp. granola (the other 1/2 of that Tbsp. went right in my mouth)
a few raisins
I was topping happy this morning. 🙂
And it made my mouth very happy. Granola is such a great addition. I love different textures and I particularly liked the crunch of the granola over the creaminess of the 30 minute oats.
When Brad finally woke up, he selected his own toppings: sunflower seed butter, banana, and cacao nibs. He loved them! I was a little surprised by this, probably because I didn’t like them so much the first time. But when I made my first attempt, I didn’t have the perfect ratio of oats to milk to yogurt down yet.
Today will be super busy:

We’re trying to finalize plans for our kitchen with our architect.
I need to work out at some point.
My brother and sister-in-law are coming over for dinner tomorrow night and the house is a wreck!
