The breakfast cake ideas won’t stop.
And there’s no need to stop them because I just stocked up on oat bran this past weekend.
Muah, huah, ha ha ha.
This past weekend, I tried out a peach version.
I put in a whole small peach so it was extra voluminous due to all of the added fruit. This also meant it took longer to cook.
But what’s a extra few seconds when you get to eat “cake” for breakfast?
Peachy Keen Breakfast Cake (serves 1)
1/2 cup oat bran
1/4 tsp. baking powder
1/8 tsp. sea salt
2 Tbsp. egg white (or 1 egg white)
14 drops NuNaturals Vanilla liquid Stevia*
2 Tbsp. milk (I used almond milk)
1 small peach, cut into bite-size pieces.
In a bowl, combine oat bran, baking powder, and salt. Stir to mix well. Add egg white and sweetener and stir well. Add peach and stir again to mix the peach throughout.
Oil a ramekin and use a spatula to scrape all of the batter into the ramekin. Press down to flatten and even out the cake. Microwave on high for two minutes.
Cake will separate from the sides of the ramekin. Use spatula to carefully remove the cake from the ramekin and plate.
*You can substitute with 1 1/2 – 2 tsp. of the sweetener of your choice, but also add 1/4 tsp. vanilla extract.
I topped mine with homemade sunflower seed butter and a dollop of Greek yogurt. Everything peach needs a bit of creaminess, don’t you think?
These little cakes are just perfect for breakfast. I think it’s high time that I try them out on my favorite taste tester, Brad.
Now if only he was home this week…
