I’ve had grilled banana lust from Caitlin’s breakfast on many occasions, so since it’s the weekend and all, I had to give it a try this morning.
Grilled banana smells so good. Who knew a little heat would turn regular ol’ bananas into ooey gooey caramelized goodness.
Peanut Butter and Grilled Banana French Toast (serves 2)
French Toast Batter:
1/2 cup egg whites
1/4 tsp. of salt
bit of Stevia
2 Tbsp. peanut flour
1/4 cup almond milk
4 pieces of bread of your choice
peanut butter
1 banana
real maple syrup
cooking spray
Mix batter together and dip toast, one at a time in the batter until each piece is evenly coated. Cook in a pan with cooking spray on medium high heat until golden brown, flipping the bread and repeating for the other side as well.
Cut banana in half, then slice each half into three long slices. Cook banana slices in a pan on medium high heat. Cook on both sides until dark golden brown.
Place bananas on one slice of toast.
Cover and top with 1 Tbsp. peanut butter and a drizzle of maple syrup.
I have a difficult time with French Toast because I’m impatient. I always end up turning the heat up too high and one side gets burned. This time was no different.
Patience is a virtue and we’ve been practicing it a lot since last night. My blog has been having some issues (nothing that you can see on your end). My wonderful husband has been working hard, trying to get Dreamhost (my server host) to fix the problem. Eventually I made him come eat breakfast. (As of right now all issues are fixed!)
I loved the grilled banana in this. I’m now wondering what else can I add grilled banana to…waffles? pancakes? grilled banana bread?
