Leftovers

Some people get tired of leftovers.  I’ve even heard some women say that their husbands refuse to eat leftovers.  Say what!?  That would be one hungry husband of mine.

My Brad loves leftovers.  If you do it right the first time, they should love it the second or third time too, right?

Today, my lunch was leftovers.  I took my leftover yellow curry tofu scramble and mixed it with some leftover quinoa.

This wasn’t entirely new and creative but just by adding a little something different to foodI have already eaten in the past few days made my taste buds think I was eating something new.

On the side I had the most possible vegetables I could fit in this container.  It wouldn’t hold one more little carrot slice.  In my salad: romaine lettuce, carrots, cucumbers, cherry tomatoes, celery, and artichoke hearts.

Brad wrinkled his nose when he saw me cutting up the artichoke hearts.  I love them.  They kind of remind me of soft pickles.  But I know to never put them in anything Brad eats.  He’ll eat my leftovers so I’ll let him stick to his artichoke aversion.

I have a late work meeting tonight, so you know that means.  Yep. Dinner in grubby old plastic containers, just like lunch.  But at least I won’t waste time and money going out to dinner.
