Reminds me of Christmas

Lunch today was inspired by Kath‘s lunch from yesterday.  When I saw this sandwich on her blog yesterday, I knew I wanted it for lunch today.

I had a turkey sandwich with cheddar and smear of pumpkin butter.  I love the combination of meat + something a little sweet.  In fact, I think this sandwich could have used a little more pumpkin butter.

On the side I had a Christmas-y salad…well, Christmas-y for no other reason than it was red and green: spinach with cherry tomatoes and red bell pepper.  It’s that time of year again when everything reminds me that it’s Christmas.  Love it. 🙂

I brought some ranch dressing to toss on my salad.  It was the same as last night’s yogurt version, this time made with Chobani.  I don’t think

I’ve never seen ranch dressing on a blog like mine.  I’m bringing it back and making it more acceptable with Greek yogurt. 🙂

Speaking of Christmas, look at this awesome gingerbread village my mother in-law made.

I hope one of these guys made it into the freezer so I could sample one when we make the trip up for Christmas. 🙂

I’m down quite a bit of water again today.  I’ve had 48 oz. so far, which means reaching 60 will be super easy by the end of the day. I guzzle water at lunch, especially when I’m eating something carby like Ezekiel bread.

Here is my brother’s update from yesterday, if you didn’t catch it in the comments section:

With today being Day 1, I knew I needed to keep my water handy at all times, so when I got thirsty I could satisfy my craving with water instead of soda. So when I bought a “drink” at work today, I bought a large bottle of Iceland Pure Water. It holds 33.8 oz of water so if I drink two of those a day, I’m good. I had about 2/3 of it with lunch, then finished the rest later. Thanks to the water filtering stations in the pharmacy, I have fresh, filtered water whenever I want, so I just refilled and drank out of that all day. So far so good!

Yay Wess!  I’m so proud of you.  Kicking the soda habit is pretty difficult.  Get through it one day at a time and before long you won’t even think about soda.  You’ll just guzzle water like it’s all you have had to drink.  🙂
