All about the pizza

Tonight was all about the pizza…

On our way out of town, we stopped by Trader Joe’s to pick up whole wheat pizza crust and pizza sauce.  Pizza is my perfect pre-race dinner.  We went crazy with veggies: summer squash, zucchini, mushrooms, and peppers (red, green, yellow, and orange).  We added lotsa goat cheese and mozzarella (I’m laying off the no-dairy this weekend), baked at 400 degrees for 20 minutes, and called it pizza perfection.

Two beauties

I had this + one more for good measure, topped off with two chocolate peanut butter balls.  Chocolate and peanut butter have to be my favorite combination in the whole world.

We hung out after dinner for, oh say, five minutes, before we decided we were tired and should head up to bed.  I’m planning on being asleep by 9 pm.  I have a 5 am wake up call awaiting me in the morning.

The race starts at 7 am!  Wish me luck for a PR!
