There’s just something about the addition of coconut that takes pumpkin oatmeal to another level.
Pumpkin Coconut Oatmeal
1/2 cup rolled oats
1/2 cup light coconut milk
1/2 cup water
1/2 banana
1/4 tsp. cinnamon
1/4 tsp. pumpkin pie spice
Toppings:
2 Tbsp. finely shredded coconut
1 Tbsp. almond butter
1 Tbsp. pumpkin butter
Perfect fuel for a busy day of working, packing, working out (hopefully!), and traveling six hours to Brad’s parents.
