What is love?

No, I’m not about to break out into an 80’s song, bopping my head and all.

This morning I showed love by giving up my second almost empty nut butter jar to Brad, rather than hoard it for two days of oats in a jar bliss.

Now that’s love.  I really don’t think Brad really understood the extent of my sacrifice.

I took the almond butter jar of course with a side of coffee and made sweet potato oats in a jar for two, from some leftover sweet potato last night.  My nutty sweet potato soup from last night called for one large sweet potato, but I used 1 1/2 medium sized potatoes instead.  I baked the leftover half in anticipation of this morning’s breakfast.

In the mix:

Sweet Potato Oats in a Jar for Two

1 cup of rolled oats
1 cup water
1 cup almond milk
1 sliced banana
1/2 medium baked sweet potato
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. nutmeg

I had to break out the sweet potato butter for this.  All of you people out there who think Trader Joe’s has the best pumpkin butter, get thee to thy nearest mountain roadside canned jams and jellies stand and taste what real fruit butters should taste like.  Trader Joe’s version is delicious, but this is sweet potato pie in a jar.
