I’m beginning to wonder about my lunch posts. I’m afraid they have become (or maybe always were) a bit stagnant. Reading blogs has inspired me to be more creative with what I pack for lunch and have encouraged me to pack more substantial lunches. I used to pack very small lunches, then realized the reason I was ravenous at dinner was because I wasn’t eating enough for lunch.
Lunch today was leftover 17 bean and barley soup with a dollop of Greek yogurt, roasted acorn squash, Kashi crackers, and three clementines. It was nice to have hot soup since I’m feeling kind of blah today.
Blah.
