It requires a lot of forethought, not just about what you want to eat tomorrow, but also what goes well together, what makes a complete meal that will get you through the afternoon, and…
what can you pack in the same container.
Today’s lunch required a lot of different containers because certain things just could not be put together.
I roasted sweet potatoes for my salad last night (you’ve gotta try this!), but I like my sweet pot warm and I obviously do not want to nuke my salad, so into a separate container it went.
Other salad components: spinach, pea shoots, cherry tomatoes, goat cheese, and TJ’s Green Goddess dressing.
I also wanted granola on my Greek yogurt and blueberries but granola gets soggy if you let it sit in liquid substances for any amount of time. Into another container it went. However, my frozen blueberries melted nicely into my yogurt with no nuking required because I didn’t refrigerate my yogurt once I got to work.
That probably grosses some of you out but hey, that’s just me. I’m forgetful like that.
