Breakfast for 4

This morning I woke up at about 7:45 am to make breakfast and start a very busy Saturday with Brad and my in-laws.

Coffee for four.  Guess which one is mine. 😉

I made baked apple ginger oatmeal for four.  If you have thought about making this, but don’t have enough time in the morning, you should know that this recipe can easily be made the night before.  I made the batter, including the baked apples, covered the bowl with aluminum foil, and put it in the fridge overnight.  I knew the morning was going to be a busy one so I wanted to skip the prep step and go straight to the cooking…and the eating. 🙂

Basically, I just doubled the recipe for two, then this morning I sprayed the four ramekins with oil, put equal amounts of batter in each one, then baked on 400 degrees F for 20 minutes.

I topped mine with almond butter and apple butter because some things never change.
