Pea shoots > sprouts

Work today was so super busy.  I didn’t barely even think about lunch until 12 pm, which is unheard of for me.  I sometimes wait until 12 to have lunch, but that doesn’t mean I’m not counting down the seconds.

You know how some people say, “Oh I just get so busy, I forget to eat.”

I can’t relate to those people at all.  We’re practically from different planets.

Lunch today was one of the sweet potatoes I baked to perfection last week.  I also had a salad of spinach, pea shoots, cherry tomatoes, cukes, and a bit of goat cheese.

Have you ever tried pea shoots before?  I picked these up at TJ’s on Sunday because I was interested to try them.  They taste very fresh and green, if that makes sense.  I think I like them better than sprouts, which always seem to go bad after spending one day in my fridge.  Plus pea shoots have waaaay more Vitamin C and Vitamin A than sprouts.

My little glass pot contained Earth Balance today for my sweet pot, instead of salad dressing.  I decided to do double apples today since I have so many and they’re the size of plums.  Look how tiny the one on the left is.  It’s practically the size of a clementine.

I didn’t have any dressing made up at home, but luckily I found this dressing I stashed in the back of the mini fridge in the storage closet…the storage closet that is twice the size of my office.

I’m not bitter.
