Like most long runs, I spend at least 25% of the time thinking about what I am going to eat afterwards. This morning’s run was no different.
I decided on toast two ways.
Toast #1: Ezekiel toast topped with Muir Glen tomato sauce, two slices of tomato, spinach, small handful of Italian cheese blend. Nuked for 45 seconds. Voilá! Instant pizza.
Toast #2: Ezekiel toast, swiss Lauging Cow cheese, avocado, and a fried egg.
I love toast. It’s so versatile.
After this I was somewhat full, but still had the empty feeling you get after you run for a really long time, so I had dessert.
~1/2 cup of Greek yogurt with microwaved blueberries,~1 Tbsp. coconut, and ~2 Tbsp. pumpkin granola.
That did the trick.
I spent the rest of the afternoon working and recuperating from my 13.2 miles. When work was done for the day I baked something yummy I will share on Saturday and did a mountain of laundry.
Despite most of it being his fault, Rascal didn’t even bother to offer to help. 😉
