I basically took every veggie in my crisper (besides brussel sprouts) and put them in a whole wheat tortilla, along with TJ’s tri-color humus and avocado. After the umpteenth ingredient, my lunch became the unwrappable wrap. So good, but a fork and knife were way necessary.
My protein choice was a 2% Fage along with a marathon strawberry eating session in an effort to not let any spoil before they were eaten. Pom and some bubbly water on the side.
Can you name all the veggies? The bigger question is can I: artichoke, carrots, yellow bell pepper, baby portobellas, carrots, and eggplant all sauteed on the grill pan with EVOO sprayed by the Misto, Garlic Gold, and crushed red pepper.
Best lunch all week.
