What I ate Wednesday 7/6


Can you believe it’s Wednesday already?

I surely can’t! I didn’t even know it was Wednesday until this little mama-to-be tweeted her What I Ate Wednesday post.  I did a double take and double-checked my calendar.  That’s what happens when you spend all of Monday in a car.  It’s almost like it didn’t happen.

Breakfast –

Chocolate breakfast cake with almond butter and raspberries.

That deserves a closeup.

Oh yes.

This was very similar to my sesame seed breakfast cake, only better because it was chocolate.  And chocolate makes everything better.

I will post the recipe tomorrow because everything delicious and chocolaty must be shared.

Lunch –

Bed of spinach with smoked turkey in barbecue sauce, tomatoes, avocados, raisins, kale chip crumbs (pre-made from Whole Foods), which I dressed in a bit of honey and lime juice

I’ve been missing salads lately since leafy greens that are good for eating raw haven’t shown their face much in my CSA box.  I broke down this week and bought salad greens.  It was crucial to my happiness.

My after school work snack escaped the camera because WIAW was the farthest thing from my mind. I had a few crackers, some goat cheddar, and a lovely peach.

Dinner –

Honey bourbon salmon, roasted potatoes and beets, and “cheesy” kale chips
