Sunday in a blur

Busy weekends are a catch 22: I have a lot of stuff to blog about but no time to do it, which is why my Sunday post is going to go by in a blur.  Don’t blink.

We had a leisurely Sunday morning, starting out with coffee.  One of these things is not like the other…one of these things just isn’t the same…if you guess which thing is not like the other…okay, I’ll stop now.

Pumpkin green monsters all around.  Part of the stipulation of being my house guest is you have to try my weird food.  Brad’s parents were good sports and even said that they really liked their breakfast.

We hung out around the condo for a while, then met my parents at the new/old house.  This was their first time seeing it and they really liked it and the neighborhood.

After viewing the house, we swung by Big Daddy’s Burger Bar for lunch.

Homemade chips and pimento cheese for the table.  I had three chips with a bit of pimento cheese.  Pretty good but still not as good as Wally’s.

I ordered a small salad with the black bean burger, corn, tomatoes, red onion, and avocado.

Gosh their black bean burgers are the best!

After lunch, Brad went back to the house to do some yard work and I went to TJ’s for my second grocery shopping trip of the week.  I had the last piece of chunky apple cake, then I went to hot power yoga.  Once I was completely out of expendable water, I returned home to shower and make dinner.

Before I could start dinner, Brad called me to pick him up because it was about to rain and he didn’t want to have to walk to the light rail and ride it uptown.

We were running a bit behind schedule (I always have a schedule in mind), so I whipped up something quick for dinner.

Salmon patties, eggplant fries, and grilled zucchini

Salmon Patties (adapted from Simply Recipes)

1 can of wild salmon, drained
1/4 cup bread crumbs
1 tsp. onion powder
1 medium garlic clove, minced
1 tsp. dried dill
1/4 cup bell pepper (I used yellow)
3 Tbsp. egg white
1/2 tsp. paprika
1 teaspoon salt
Several turns of freshly ground black pepper
Extra virgin olive oil

Combine all ingredients except the EVOO.  Warm a skillet on medium high heat and add 1 Tbsp. of EVOO or use a Misto to spray.  Pick up about 1/3 cup of mixture and press firmly into a patty shape with your hands.  Put in pan.  Repeat until you have three patties.  Cook until each are brown, repeat for other side.

I got my eggplant fries recipe from Lindsey.  The only thing I changed was that I used Garlic Gold instead of regular garlic and I put the oven on 450 degrees F because I’m impatient like that.  I sliced the zucchini thinly, then cooked them on a grill pan with a spray of EVOO, red crushed pepper, Garlic Gold, salt, and pepper.

Brad declared the salmon patties a winner.  He didn’t love the eggplant fries, but I thought they were delicious, especially when I used them to consume several tablespoons of ketchup.

I love a meal that has several items in need of ketchup. 🙂
