Peanut Butter Banana Green Smoothie

I’ve said this 100 times, and I’ll say it again — green smoothies are the best way to trick yourself or someone else into eating vegetables.  I felt really guilty about not wanting to go near vegetables during my first trimester, but I felt a little bit better when I had this smoothie for breakfast due to the huge fistful of fresh spinach I dumped in the blender.

If you’ve ever read another of my posts about green smoothies, I probably sound like a broken record but I swear, you can’t taste the spinach at all.

Peanut Butter and Banana Smoothie

If you’re feeding this to a picky eater, I suggest putting it into an opaque cup with a top and a straw.  Even seeing the green sometimes grosses people out.  Make sure they really truly like it (and they will) before ever letting them see that the color of this smoothie resembles the skin of the Wicked Witch of the West.

Peanut Butter Banana Green Monster

 

Peanut Butter Banana Smoothie
(Serves 1)
An easy and delicious way to get more greens in your diet!
Ingredients
1 banana
1 handful of fresh spinach (~2 cups)
1 cup almond milk
1 scoop vanilla protein powder (or 1 serving)
1 Tablespoon peanut butter
Stevia to taste (optional)
Directions

Place all ingredients in a blender and blend until smooth.

Notes:

I typically use frozen banana and spinach in my smoothies, but lately I've been loving using fresh versions so my smoothie is drinkable through a straw.

I've also used 1 Tablespoon of PB2 in this smoothie in place of the peanut butter (impulse buy at the grocery store). It makes this smoothie much sweeter. Do not use Stevia if you use PB2, which is sweet enough on its own, else your smoothie will be much too sweet.
