Back at it

I’ve had a rough couple of days with exercise.  Somehow I ended up doing nothing despite my best laid plans on Wednesday and Thursday.  My schedule is a little more laid back on Friday since I work from home.  I had no excuse but to get back at it.

I started my day off with a good breakfast:

2 Flax Plus waffles with a bit of syrup and 1/2 Tbsp. AB

1 egg white fluff (spray a ramekin with non-stick spray, pour in 1/4 cup egg whites and nuke for 1 min. + salt + pepper)

2 delicious watermelon slices

My Garmin was dead but I know I pounded out 6 miles in less than an hour (including both elevator rides).  It felt great today.  The weather was perfect.  After running in beastly heat, my run seemed almost effortless.  Maybe I should have ran faster?  Nah, it was nice to just get back out there. Even though I have been exercising (except for the past few days), hardly any of my runs have been outside.  Running outside versus the treadmill makes me so much happier.  I need to remember that the next time I avoid a run.

After my run, I tied myself over with three pieces of dried unsweetened mango and a Pink Lady apple.  After a few phone calls and some work, I made lunch for Brittney and I.

Tempeh and Corn Quesadillas

Leftover roasted peppers coarsely chopped

One block of tempeh + a bit of leftover tempeh (the darker one) sliced into fourths and sauteed

Two big handfuls of spinach wilted in a skillet

Two corn on the cobs grilled (leftovers) – I cut the corn off the cob.

Add red peppers

2 oz. goat cheese

2 Garlic and Herb Laughing Cows

1/4 cup salsa

1/2 tsp. cumin

1/2 tsp. garlic powder

salt + pepper

Nuke for 30 seconds in the microwave to soften the cheese, add the spinach, and stir.

Spread mixture on one large tortilla (I used Ezekiel) and top with another tortilla.  Cut in half.  Saute in skillet until tortilla starts to brown, then flip and brown other side. Cut each half into fourths.

My plate after re-assembling the quesadilla because my contents always fall out during the flipping process.  Any ideas how to avoid this?

We ate outside on the balcony and caught up on wedding stuff and Brittney’s knee issues.  It was really nice to catch up with her. 🙂

Now I’m off to Raleigh to pick up Brad at the train station so we can head out to the coast to see his family for July 4th!  I’m so excited!  It’s so relaxing out there and we always eat so well because Brad’s mom is a fabulous cook.  Stay tuned for delicious photos…
