Sandwich concoctions

This week has been one of those weeks where fitness seems to slip away from me.  I haven’t been the picture of consistency working out this week.  But what I’ve lost in workouts, I’ve made up for in fun.

The best part of the week was Brad showing up last night to surprise me. He wasn’t expected until tomorrow night, late.

I’ve been super duper busy, for sure.  And one of the things that has made my meals simple, quick, and delicious this week, is Flatout wraps.  Here is how I’ve been using them.

Breakfast Sandwich

Traditional Country Flatout Wrap topped with almond butter, blackberries, banana slices, Greek yogurt, and shredded coconut.

Tempeh Pesto Wrap

Rosemary Olive Oil Flatout Wrap with toasted tempeh, my vegan pesto paste, a slice of tomato, feta, and dipped in tomato sauce for extra saucy goodness

Tuna Melt Wrap

Traditional Country Flatout Wrap with tuna (mixed with light vegan mayo), a slice of lite cheddar cheese, and a huge piece of chard

Of course, any of these sandwich fillers could be used on any bread, wrap, or pita.  But trust me, they’re really delicious on a Flatout wraps.  I especially like these foldable versions because I often fill wraps too full and can’t close them.  Also, with these, the little odds and ends I add to a sandwich (like blackberries and crumbled feta cheese) are less likely to fall out while I’m eating.

So tell me, what’s the tastiest sandwich or wrap you’ve ever had? I love to hear new interesting food combinations! I can’t think of one in particular at the moment, but if I ate it at home, Brad was sure to have made it.  He’s the master sandwich chef in our house!
