Corner a running buddy

Yesterday afternoon, I decided it would be nice to get a in a run while it was still daylight.  I cornered Nicole on Twitter tweeted to Nicole if she wanted to run and a little while later, we made plans to meet at her place.

God bless twitter. If you can’t reach me on my phone, my email, Brad’s phone, Facebook, or Gmail chat, you can probably reach me on Twitter.  If not, I’m probably lying in a ditch somewhere and you should notify the authorities.

Nicole did a lovely 4ish miles then walked around the block to cool down, chatting all the way.  When we passed by Caitlin’s house at the start of our run, she invited us over to taste Diana’s vegan coconut cream pie.  So after our run, we swung back by Caitlin’s to taste Diana’s goodies.

The pie had a great texture and was very coconutty.  I liked the crust on the pie best.  It was more crumbly than the tartlets.  Diana is spot on when she says it’s not very sweet, but the coconut makes it very flavorful.  It’s nice not to have a super sweet dessert sometimes.  It feels more like a snack that’s not so bad for you than a dessert.  I’m sensitive to sugar.  I either crash and burn or get major cravings for more sugar, and this dessert didn’t make me feel this way at all.

I’ve learned that dessert after a meal doesn’t have this same effect on me because it’s been balanced out by protein and fat.  I ate about 1/3 of a pie slice on an empty stomach and felt absolutely fine.

I got this message via Facebook from my friend Kristen earlier in the day, so I had to swing by the Teeter to stock up on Larabars.  You know you’ve publicly professed your love for Larabar several times if you’re friends across the state are notifying you of Larabar sales.

After Harris Teeter, I got started on the meal I had planned for last night.

Nutty Spicy Tofu
Kale chips with red pepper flakes, kosher salt, and ketchup
Roasted acorn squash with a bit of extra virgin olive oil and kosher salt

I followed the same recipe as usually for the tofu, but I cooked it a little while longer as I’ve learned improves the texture of tofu: 350 degrees for 35 minutes, then 250 degrees for 15 minutes.

I photographed this on the table, as usual, but in reality Brad and I ate this on the coach catching up on the latest Jersey Shore.  It must seem like we watch a lot of television, but in reality we only watch about an hour a day.  On week nights, we go to bed super early so we only have time for an hour shower or two thirty minute shows typically.

We also tried out Dexter for the first time, per the lovely Jess‘ recommendations.  I’ve been hearing good things about that show for a while so it’s been on my list of things to watch.  The verdict?  It’s very dark but interesting.  Definitely a unique premise for a plot line.
