What’s the perfect breakfast the day after Thanksgiving?

A green monster!  This guy cancelled out the fact I ate absolutely no greens the night before.  I’m pretty sure my meal consisted of 40% butter, 40% starch, and 20% protein.  It was soooo delicious.

Someone commented that it didn’t seem like I ate that much on Thanksgiving so I feel like I should point out that dinner was at 6 pm and I had been eating normally all day with a snack of Greek yogurt that afternoon.  I don’t want anyone to think I’m being restrictive.  I was overly full when I left, I assure you.

This lovely green concoction is a pumpkin smoothie. Maybe I should rename this a pumpkin spice smoothie because in this version I double the spices (1/4 tsp. of cinnamon and pumpkin pie spice) and add 1/8 tsp. of cloves.  Oh man.  The addition of cloves is ah-mazing.  Go make this now.

I love not going Black Friday shopping the day after Thanksgiving.  This means that I get to relax, which I don’t get enough of.  Brad and I started watching Eat, Pray, Love the night before, but our food comas eventually coaxed us to bed and we didn’t even get through Liz’s time in Italy.

We finished watching it the next morning and I have to say that I had a similar feeling about the movie as I did the book.  I thought it was pretty good, but I wasn’t blown away by it.  I think I have trouble relating to her character.  I get why she felt the way she felt, but I have trouble relating to how she acted on these feelings.  But that’s just me.

The rest of the morning was filled with No More Trouble Zones. Has anyone else ever done this video? Does anyone else hate surrenders as much as I do?  They kill my shoulders, especially since they’re one of the last moves in the set.

Brad was about to gnaw his arm off by the time noon rolled around.  I talked him away from the fridge and promised to make lunch and even to share my nutty spicy tofu with him.  I don’t think I made an adequate big deal about this tofu.  It is literally the best tofu I’ve ever had and Brad confirmed this when I let him try it yesterday. He also agreed that it is the best tofu he has ever had and said it tasted like spicy fried chicken.  🙂

I sauteed mushrooms, yellow squash, and red and green bell peppers in a cast iron skillet.  When they were almost done, I added the remaining tofu (~1/3 of a block) which I had chopped into smaller cubes.

I warmed two Ezekiel wraps in the oven.  Did you know these have been discontinued?  So sad.  I think the smaller versions are sticking around.

I smeared one side of the wrap with humus and the other side with avocado.  I put half of the veggie tofu mixture on each wrap, then rolled the whole thing up.  I think I’ve finally learned the trick for getting wraps to stay wrapped.  Smear humus near the edge and use the humus to seal it closed.  Humus = wrap glue.

I ate mine with two sliced kiwis.  Yum, skin.

From this angle, you can totally tell that I took two bites of my wrap before remembering to take a photo.  Maybe Brad wasn’t the only one who was about to gnaw his arm off. 🙂
