Post long run eating

Although it totally hit the spot, Yoforia was not enough to keep me satisfied after running 18 miles.

Around 4 pm, my tummy was growling for more substance.

I threw together a snack bowl of quinoa with roasted chickpeas and corn, plus some avocado.  I got a little messy with the avocado (see finger).

A sweet ending by the cookie nobody likes but me.

I spent the afternoon doing blog stuff, choosing wedding photos (it’s taking me forever!) and looking tax credits for renovating a historical home.

Around 6 pm, I stood up to make dinner and knew I wasn’t going to make it without some major snacking.  So, I tore into these.

I made a major dent in the hummus.  8 servings in a pack? Yeah, right.

Then I got right to dinner.

And before long, I had dinner for two: nutty sweet potato soup, whole wheat biscuits, and sweet and spicy brussel sprouts (click for recipes).

The first two recipes come from the Food Network site and are two of my very favorite recipes of all time.

The nutty sweet potato soup is an Ellie Krieger recipe I found about a year ago.  Instead of PB, I used almond butter.  Also I didn’t add the honey, just because I completely forgot it and then decided it wasn’t needed.  I also opt for a dollop of Greek yogurt rather than scallions.  Brad and I both agree the yogurt totally makes the soup.

The second recipe, for the whole wheat biscuits is the easiest biscuit recipe ever.  It’s not nearly as temperamental as my grandmother’s biscuit recipe, which I love.  I never have buttermilk on hand, so I always sub in 1 cup of skim milk + 1 Tbsp. lemon juice.

Brad made quite a dent in the biscuits and sang my praises during and after this dinner.  I love this dinner myself.  It’s so yummy and comforting.  I can never get enough of this soup.  🙂

After dinner, Rascal looked very sullen about the fact that Brad and I had to go back over to the new/old house because a fuse had blown.  We decided not to let him tag along and he’s never happy about  being left all by himself.  We weren’t able to fix the fuse  because Lowe’s had long been closed so I couldn’t take a photo of Brad’s work for the past two days.  The kitchen is quite a mess now that the floor is tore up and most of the left wall is missing, which only means the renovations are going to be that much more dramatic.
