Eat salad, repeat

I’ve been a salad machine the past few work weeks.  I blame it on easy access to fresh veggies at the farmer’s market and grocery stores.  I like to eat seasonally and this time of year when there is soooo much in season, the possibilities are endless and so are the ingredients in my fridge’s crisper.

Lunch today was (big surprise) a salad.

– mixed greens

– canellini beans

– leftover sauteed corn and peppers from the night before

– carrots

– celery

– bit of feta

– parsley and green onions

Eaten with one of the best peaches I’ve had all summer. I also made a salad dressing last night that I’ve been wanting to try out.  When we visited Brad’s parents a couple of weeks ago, they had a pre-made tomato/vidalia onion dressing that I really liked.  My version didn’t turn out the same (I think it was too much onion), but still tastes pretty good.

In the Vitamix, I through in…

– one can of diced unsalted tomatoes

– 1/2 chopped Vidalia onion

-2 tiny scoops of Stevia (or 2 servings depending on what type you use)

-3 Tbsp. EVOO

– 3 Tbsp. apple cider vinegar

– salt to taste (this needs a good bit of salt)

I only used about 1/4 of the container in the photo, then stuck it in the office fridge for inevitable future salads.

For snack I had about 2/3 cup of Greek Gods Greek yogurt + blubes (from Currituck).  Full fat yogurt definitely holds me over until I get home, but I think I see a snack in my future to help fuel my workout.

My plan for tonight:

1 – Run for 30 minutes on the treadmill (the heat is back!)

2 – Do JM’s 30 Day Shred

3 – Roasted roots for dinner + black bean burgers (?) and blog all about it

4 – Write thank you notes

5 – Fold clothes (if there is time)

Think I can accomplish that in four hours?  Maybe…I have issues with high expectations of accomplishing a lot in a little bit of time.
